Chefs at Market: Grilled White Eggplant

Yes, you could go nuts and fry the perfect summer eggplant, flouring each disc and then dropping it into hot oil.  Of course, then you’d also have to layer the fried eggplant in a baking pan with tomato sauce and mozzarella and then bake it all together in a hot oven for about an hour. Folks, we’re talking two solid hours in a kitchen, in August, slaving over hot oil. Do what we do and simply throw that eggplant on the grill with salt and a bit of olive oil. The result is soft, delicious, and lightly scented from the fire. Heaven!

Grilled White Eggplant from Migliorelli Farms

  • 1 large white eggplant, about 1¼ pounds
  • ¼ cup extra virgin olive oil
  • Salt, to taste
  • Freshly ground pepper, to taste

Heat a gas or wood-fired grill until hot. While that’s heating, slice the eggplant into ½” slices and brush each slice with olive oil. Season with salt and pepper and grill the slices until golden and marked with black grill stripes on each side. A little char is fine. Serve with grilled meat, fish, or chicken—it’s also fabulous on grilled bread with a touch more oil.
