Farmers Market Dishes Up Watermelon Gazpacho in New Rochelle

What do you do when a watermelon falls to the sidewalk and breaks open?

Well, if you are Amy Gardiner, the market manager for Down to Earth Market's New Rochelle farmers market, you make watermelon gazpacho.

She said one of the watermelons being sold by Alex's Tomato Farm fell and cracked open Friday, so she decided to create a dish that farmers market patrons could sample.

Gardiner used ingredients found at the market: tomato, cucumber, onion, bell pepper and hot peppers.

The chilled soup was served chunky-style.

"Ideally, you want to process it to make it into a soup," Gardiner said, "but I don't have a blender or electricity here."

She also didn't have any salt, she said, which should be added to the soup.

Gardiner said that Acevedo's Farm has returned to the market. A new vendor is Eden Food of Amityville, which features freshly made tahini, hummus, falafel and baba ganoush.

The Down to Earth Farmers Market is open from 8:30 a.m. to 2:30 p.m. Fridays at Huguenot Park on North Avenue near the high school.
